Green Salad With A Blueberry Dressing

There was a time when I was healing from a breast cancer recurrence, that friends and family affectionately referred to my anti-cancer diet as my anti-social diet. 

It wasn’t their fault. Fortunately for them, they had never found themselves on a healing journey and therefore had very little idea just how deliciously satisfying natural, whole foods and salads can truly be. 

Cancer turned me into a food snob, in the best possible way!

I looked forward to weekend farmer’s markets, and avoided packaged foods, store-bought salads and pretty much every 'food' item found in the middle aisles of the supermarket.

When made with fresh, whole foods, love and intention, food really can be a powerful form of medicine. 

That’s why today I want to share with you a delicious salad recipe, full of phytochemicals that promote healing in healing in the body, that you can take to any festive gathering which will have people begging for more.

Green Salad with a Blueberry Dressing

Ingredients: for the dressing:

2 cups fresh or frozen organic blueberries

¼ cup sesame seeds

¼ cup sunflower seeds

½ cup pomegranate or tart cherry juice

4 Tbs apple cider vinegar

Ingredients: for the salad:

2 heads cos (romaine) lettuce, washed and chopped

2 sprigs fresh mint, torn

1 cucumber, diced

1 cup cherry tomatoes, halved

Handful of broccoli sprouts (any sprouts will do)

1 spring onions, sliced

Method: Puree all the dressing ingredients in a high powered blender until smooth It should yeild around 4 serves, so use only as much as you need, and store the remainder in a glass jar the fridge. It will last 2-3 days.

Toss all the salad ingredients together

Combine dressing and salad, and enjoy!
